Dessert! Yum! These are so simple to make and so delicious to eat. Mess around with the recipe, add things you think would be good, add more sweeteners if you like, or keep it simple. It’s your dessert, so have fun with it.

Start with two medjool dates if you’re making a quick dessert for just you. If you want to make more than just one serving, figure on two dates per person, and multiply the rest of the ingredients accordingly.

Split the dates open with your fingers and pull out the pits.

Chop the dates into smaller pieces.

Add the dates, 1-2 teaspoons raw cacao powder, a sprinkle of sea salt, and a few drops of vanilla to a food processor.

Process everything until it rolls up in a ball. Try the mixture to see if you like it. If not, adjust it by adding more cacao, or more dates, or more salt, or even a little honey or agave.

Wet your hands, separate the mixture into two parts, and roll it into two balls. They’ll be wet and sticky, so it’s a good idea to roll them in a powder coating. You can use more cacao, cinnamon, chili powder, or whatever you think might be tasty!
